Eggs can be a highly nutritious food for at-risk populations as has been demonstrated in studies in children from underdeveloped countries, in individuals who live in poverty and even in subjects with metabolic syndrome or those with documented diabetes.

The goal of this book is to demonstrate that eggs in addition to being a highly nutritious food, they also provide additional health benefits and should be considered as part of a healthy diet for all populations.
